We eat a lot of roast chicken in our house so I am always looking for leftover chicken dinner ideas and this is definitely one of my favorite leftover roast chicken recipes. One of my absolute favourite things to do with roast chicken leftovers is turn them into a delicious curry. Melt butter in a large saucepan. Cook over medium heat, stirring frequently, until onions are translucent, then add flour, curry powder and salt and cook for a couple of minutes. Add the spices and chopped green chilli, mix well, then add the chicken cut into pieces and mix to coat. Once hot, fry the chicken until golden brown on all sides.
